How many ways can you prepare a chicken breast?



Boneless, skinless chicken breasts. Alone, kind of boring. With February being Heart Health Month, I thought I'd share some ways to take a plain ol' piece of protein and throw together some healthy additions to make tasty creations.
A variety of salads to add to your skinless, boneless chicken breast!
Southwest style grilled chicken salad~
Mediterranean salad~
Cranberry Walnut chicken salad~
All of these salads start with a grilled chicken breast. You can use any type of greens you like for the base of the salad. For instance, I like to use a romaine or field greens mix.

Now for the southwest salad you can add corn, tomatoes, fresh avocado (a small amount, since it is high in fat, but also good for you), black beans, onions, and for a healthy dressing I would use fresh salsa. O.k, use canned if you're so inclined.

For the Mediterranean salad, I like to add, black olives, cucumber, ripe tomatoes, red onion, feta cheese, (a low fat variety would be good here). A good low fat Greek dressing would be nice with this salad. You can make your own using:
cold pressed, extra virgin olive oil
balsamic vinegar
salt and pepper
oregano
thyme, or any other herbs that you like

Cranberry Walnut chicken salad

For this salad I add a bunch of dried cranberries to the greens and cut up chicken breast and add some feta cheese and chopped walnuts. (Walnuts are good when toasted, as toasting will bring out the natural oils in the nuts. You can toast walnuts on a cookie sheet spread out and bake at 350 degrees Fahrenheit for about 5 minutes. A good dressing for this one could be a simple balsamic vinaigrette, or a fruited vinaigrette.

What time is dinner? Everything sounds so delicious. I can't wait to try the Southwestern chicken and the Cranberry Walnut Salad. I am definitely going to try the chicken recipes. I love simple with that little extra something kind of food.
Little food suggestion for those who might read this. When I make chicken salad, cole slaw, etc (basically anything with Mayo) I substitute about 80% of it with plain yogurt. It gives a really creamy taste

Thanks for participating in the Blog Carnival. Your salad ideas are wonderful, and I am all over the Walnut Craisin Salad. Sometimes, I run into Trader Joe's and pick up their packaged Walnut Craisin Salad. Then, all I have to do is thrown in a chicken breast that I might have cooked and frozen. (Well, first I would thaw it out, THEN throw it in!)
